1. Pre-heat the oven at 180 degrees.

2. Butterfly the chicken breast.

3. Fry the spinach in tsp. olive oil until wilted down and softened. Dry the spinach with paper towel to remove excess oil, put back in the pan and mix in the feta cheese. Add chilli flakes and season well.

4. Place the feta and spinach into the middle of the chicken breast and fold the top over.

5. Tightly wrap the chicken breast in tin foil and place in the oven for 25-30 minutes. Check to make sure it's cooked.


Serving suggestions

Low carbohydrate - serve with selection of vegetables or salad

High carbohydrate - serve with choice of rice, potatoes, couscous etc.

  • Large handful of spinach
  • Tsp. chilli flakes
  • Salt and pepper
