1. Pre-heat the oven at 180 degrees.

2. Butterfly the chicken breasts.

3. Whisk the egg, milk and pinch of salt in a bowl.

4. Mix the oats, cayenne pepper, paprika, herbs, flour and pepper and spread on a plate.

5. Dunk the chicken in the egg then coat either side with the oats mix.

6. Heat up a tbsp of extra virgin olive oil in a frying pan, and fry the chicken breasts for a few minutes either side.

7. When both sides are browned, pop them on a tray and place in the oven at 180 degrees for final 5-10 minutes. Serve with sweet potato wedges for a proper KFC alternative!!

Serving suggestions

Low carbohydrate - Serve with salad or fibrous vegetables.

High carbohydrate - Serve with potatoes or rice with vegetables.
